To get the true British experience with fish and chips (not "fries") you need to fry both the fish and the chips. Chips cooked in any other way (such as an oven or microwave) are invariably hard in the middle as they are not exposed to heat long enough to cook them through. Chips served on a plane would not be fried, therefore they would not be cooked properly.

My Grandfather's family used to have a fish and chip shop and he taught me the proper way to cook fish and chips

Another bad way with chips is to put the raw potatoes into fat which is too hot and smoky. This has the effect of browning the outside of the chip but leaving the inside raw as the outside becomes overcooked by the heat before the inside has had time to cook properly.

The fish nd chips are pre cooked (fried) and simply warmed up
Like every other meal on board. Am sure those who introduced
The idea at BA catering must have tried it and deemed very tasty, or
At least acceptable. No one' s deep frying on board, nor steaming
Raw fish!
