You're overlooking some of the potential ramifications of this overhead space. Some of the things Boeing mentioned are highly viable options. Moving the gallery up to this overhead space frees up additional room for seating, and should be quite doable by all accounts.
IIRC the Tristars, which do commonly have galleys off main deck, in the belly, have catering door in the galley.

A galley in the attic of a B747-8 might have trouble with catering doors... How does food normally get up to the upper deck galley of B747?

This is the one awkward element of such a scheme in my mind. I'm thinking some extremely basic elevator might be an option. You would simply need it to be able to take a food cart between each level. The obvious question would be the weight of such a mechanism.

On the other hand, I may be missing whatever the obvious solution to move food to the top level is for a 747. :lol:
