Not sure about the A300/A310, but I suspect it might/will be the same as other types I am familiar with.
Flying with a flap track canoe missing is absolutely no problem, providing that the correct procedures have been followed (Dispatch Deviations Guide consulted, extra fuel usage taken into account, etc. etc.)
Of course, this is in the case the canoe was removed by maintenance crews for some reason. If it fell of during flight for some reasons, more inspections etc. would have to be completed.

Nope, extra fuel to compensate the increased drag. The only use for the flap track canoes is to reduce drag. They have no structural function.

We departed LIS also without the flap track canoes.
